Alcoholic fermentation at a controlled temperature of 12 °C over a period of 30 days. The wine was subsequently aged for 8 months in stainless steel tanks on fine lees with periodic lees stirring (bâtonnage).

Alcoholic fermentation at a controlled temperature of 18ºC for 10 days, with daily cap management through punching down and pumping over. Following fermentation, 70% of the blend was aged for 12 months in French oak barrels with fine lees stirring, while the remaining 30% was kept in stainless steel tanks.
